Banana Cacao Flax Bread
If you didn’t have any weekend plans, you do now.
I have a few more ripe bananas and I can’t wait to make this goodie again because it didn’t last very long last time.
& I mean, who doesn’t love banana bread?? Especially when it is guilt-free, gut healthy, and delicious!
Gluten-free, dairy-free, paleo, and easily made vegan this bread is all things and has some added fiber from flax + is loaded with antioxidants & minerals from cacao nibs.
I ate this as a standalone, but it’s the perfect compliment to morning coffee or matcha or as a topping for yogurt bowls
Ingredients
2 ripe bananas, mashed
2 cups organic almond flour
1.5T flax seed
1/4c cacao nibs (can easily swap for and generously add chocolate chips!)
1/4c maple syrup
1 room temperature pasture-raised egg
1.5tsp baking powder
1tsp vanilla extract
How to:
Pre-heat oven to 350F. Mix wet ingredients and dry ingredients separately. Add dry ingredients to wet, and mix. Fold in cacao nibs or chocolate chips. Bake for 35-40 minutes until cooked through. Let sit and cool, serve and ENJOY!
