Chocolate coconut chia truffles

On Instagram, a lot of you voted for a good energy balls recipe and I *think* I nailed the perfect festive energy bites!

Inspired by my favorite chia truffles from a local coffee shop, these little balls of joy are gluten-free, paleo, vegan and bursting with both flavor textures! They’re loaded with plant-based protein and healthy fats making it the perfect snack addition to any meal.

Recipe
1/3c almond butter (my favorite is Woodstock foods!)
1/3c sunflower seeds
2T cacao powder
1/4cup maple syrup or honey
3T chia seeds
2T unsweetened coconut + more for rolling

Grind sunflower seeds in a food processor (or blender). Then add everything to a bowl, mix, scoop into balls (makes about 12), and roll in extra coconut & ENJOY!
