Green Goddess Vegan Tacos

When I say these tacos are so EASY, I’m not kidding.

These Green Goodness vegan tacos are loaded with healthy fats, nutrients, and plant-based protein! They’re gluten-free, dairy-free, and can easily be made grain free to suit everyone’s diet. They’re simple to make, full of flavor, and can be eaten anytime you want - as a meal or a snack!

Vegan taco Ingredients:
2 tortillas - I used these chickpea tortillas
1/2 an avocado, sliced
2 tbs hummus -
1 cup chopped kale
1-2 tbs sprouted pumpkin seeds
Microgreens to top
1tbs Olive oil to cover pan + more to drizzle
Juice from 1/4 lemon
Sea Salt, pepper to taste

Sauté kale with olive oil & sea salt. Meanwhile heat up tortillas (I add mine on top of the flame and flip). Spread hummus on each tortilla, add kale, slice and avo, top with pumpkin seeds, garnish with microgreens, drizzle some olive oil and tahini, squeeze lemon and ENJOY.
