Simple Mango Salsa Shrimp Tacos
2 Taco Shells of choice, I love these grain-free shells from Siete
1/2-3/4 of a mango, cut into squares
1/2 avocado cut in squares
2/3 cup diced baby bell peppers
1/2 cup chopped cherry tomatoes
3Tbs chopped fresh cilantro
Juice from 1 lime
2-3Tbs olive oil
Wild caught shrimp
Marinate shrimp in oil, salt and pepper, and lime juice. While marinading, prep avocado, mango, vegetables + cilantro & toss. Mix in lime juice, and leftover olive oil. Fry shrimp until cooked + crispy on each side. Add it all to your shells & ENJOY!
