Seasonal Herby Summer Salad

This is the perfect SEASONAL summer salad! Loaded with fresh herbs, delicata squash, berries and leafy greens this is full of flavor and texture. Given that most of these ingredients are in season, this salad has a fresher flavor and greater nutrients.

Herbs contain some of the most potent antioxidants on the planet & are naturally anti-inflammatory! Adding just a little bit of fresh or dried herbs daily helps to give you essential nutrients that boost immunity, aid digestion, and improve brain function (later, brain fog)!

My favorite ways to add in herbs:
🌱Chop them into my favorite salads
🌱Use them in marinades/seasonings
🌱Blend them in smoothies/juices
🌱Sip them in tea

Recipe:

  • Big handful of fresh greens

  • 1/4 cup blueberries

  • 1/2 small delicata squash, roasted (I roasted at 400F for 15 minutes in salt and evoo)

  • 1/3 avocado sliced

  • 2tbs raw walnuts

  • 1/3 cup cooked quinoa

  • herbs of choice - I used parsley, mint, and basil

I dressed this in a traditional balsamic vinaigrette, but feel free to dress to your liking
