Loaded Green Goodness Salad

My take on the famous Green Goddess Salad!

So it’s not actually my take on the famous Baked by Melissa salad at all, BUT it is green and I just couldn’t help myself!

This salad was LOADED (I’m actually so full after eating it) and I enjoyed it to the last bite. The healthy fats and fiber in this will keep you feeling full and focused all while fueling and promoting a good gut microbiome.

I’m also going to call this my organic greens salad because most of the vegetables in here tend to be more highly sprayed in pesticides when not purchased organic. I use the Environmental Working Group’s Dirty Dozen list as a guide to buying organic to know when it’s great to save money on regular produce and skip out on vegetables with more harmful herbicides and pesticides!

Never underestimate the power of classic flavors! I dressed this goodness using my favorite simple combo of olive oil + lemon + fresh pressed garlic & salt/pepper and it did not disappoint.

Green goddess salad
Big handful of spring mix
Big handful of organic kale
1/3c great northern beans
1/2 an avocado, cubed
Few stalks of celery, chopped
2 organic mini cucumbers, chopped
A generous drizzle of extra virgin olive oil
1 minced garlic clove
Squeeze of lemon
Salt&pepper to taste

Rinse and chop vegetables, add everything to a bowl, mix up dressing, toss and devour !
