Spicy Summer Shrimp Tacos

Can’t even pretend to care that this recipe screams summer when we’re seeing pumpkin spice everywhere. These tacos might seem out of season, but they are very satisfying!

Tacos will forever be in my weekly rotation and so will some version of this colorful mango salsa. Sorry not sorry!

Gentle reminder that eating the rainbow and adding a variety of COLOR to your plate is one of the best ways to ensure you are getting all of the vitamins and minerals your body needs thrive!

I love this recipe because it really takes advantage of the flavors and textures found naturally in food to give it the excitement it needs. I added some spicy seasonings to elevate the shrimp, but even if we left the shrimp cooked plainly, this meal would still be exploding with flavor and juices!

Ingredients:
blue corn tortillas
1lb wild shrimp
1 avocado, cubed
1 mango, cubed
1 bell pepper, diced
1 bunch cilantro, chopped
1/2 red onion, diced
1tbs olive oil
Juice from 1 lime
Salt & pepper to taste
1/2tsp each of paprika, garlic powder, onion powder
Dash of cayenne

Marinade shrimp in olive oil, salt, pepper, paprika, cayenne, and garlic/onion powder. Sauté until cooked through

Add mango, avocado, lime juice, cilantro, bell pepper, salt, and pepper and mix.

Heat up tortillas, prepare with rainbow salsa and shrimp & enjoy!
