Sweet Potato Toast 3-Ways
If there’s one thing I love more than bread, it’s potatoes! They are so versatile and have proved to be beyond a staple in my diet.
When I work with clients, most always seem to want more support with breakfast. They get bored of eating the same few meals each week, and are always looking to switch up but struggle with finding meals that are convenient for those busy mornings.
Enter sweet potato toast - an easy spin on everyone’s classic - and convenient - breakfast!
Sweet potatoes are full of fiber, antioxidants and Vitamin C, making them one of the best foods to start your day with! They can provide you with sustained energy, support a balanced blood sugar and honestly, they taste great!
How to:
Cut 1 potato into 1/3-1/2 inch slices. Place a wet paper towel over them and microwave for about 1 minute. Let them cool for 1-2 minutes, then toast them until crispy.
Toppings:
Peanut butter and blueberries
Yogurt, sliced figs, raw honey and cinnamon
Classic avocado and everything but the bagel seasoning
