Maple Apple Walnut Salad

Fall is right around the corner, and that means, so is pumpkin spice season.

I’m not always the biggest pumpkin gal in the fall (please don’t come at me!!) but I am a sucker for maple everything! Hence, this maple walnut salad.

Sometimes adding some simple flavors and basics together make the best meals. And in honor of the changing seasons, I incorporated some of my Fall favorites - maple, apples, and spinach. Really though, the dressing is the star of the show - details below.

Ingredients

  • 1-2 cup baby kale

  • 1-2 cup baby spinach

  • Handful alfalfa sprouts

  • 1 organic baby cucumber

  • 1 chopped Macintosh apple

  • Simple roasted chicken breast, chopped

  • 2tbs chopped walnuts

Dressing

3Tbs olive oil
2Tbs maple syrup
2tbs ACV
1 tbs dijon mustard
Salt and pepper to taste
