Blackened Chicken Tacos with Cilantro Lime Slaw

Ingredients:
1 lb organic chicken breast
½ head red cabbage, chopped
1 bunch fresh cilantro, chopped
Juice of 1 lime
1 tbsp avocado oil
Corn tortillas (6–8 depending on size)
Spices for chicken:
1 tsp paprika
1 tsp chili powder
½ tsp garlic powder
Salt and pepper to taste
Optional toppings:
Sliced avocado
Your favorite salsa
Lime wedges for serving
Directions:
Preheat oven to 375°F.
Coat chicken with avocado oil and spices (paprika, chili powder, garlic powder, salt, and pepper).
Place chicken breasts on a lined baking sheet and bake for 20 minutes or until internal temperature reaches 165°F.
While chicken is cooking, chop red cabbage and cilantro. Add to a bowl with lime juice and a generous pinch of salt. Toss well and set aside to marinate.
Warm corn tortillas in a dry skillet or over a gas flame for ~30 seconds per side.
Once chicken is cooked, let it rest for 5 minutes, then slice or shred.
Assemble tacos: Layer tortillas with chicken, cabbage slaw, and any additional toppings.
