Dijon Mushroom Vegan Tacos

Do you get in the habit of only eating certain foods?

This is something I used to do A LOT. Some kind of egg and avocado combo for breakfast, a salad or leftovers for lunch, & a pasta or protein for dinner.

Switching up my meals is something I’m always focusing more on, and I think I’ve gotten pretty good at it! Having variety in our diet is one of the best ways to ensure we can different nutrients to support our overall health.

There’s nothing wrong with eating out of habit - it’s usually because we like it, it’s easy, convenient, etc. But it can also be a bit boring and sometimes less satisfying. If you’re full, but not satisfied by what youre eating, don’t be afraid to mix it up - have fun with it! I swear when you make something you’re EXCITED to eat, you really enjoy every single bite!

For the tacos - serves 1

  • 2 chickpea tortillas - mine are Siete

  • 1-2 cups chopped vegetables of choice - I sauteed mushrooms, onion, zucchini and cauliflower

  • 1 clove garlic

  • 1tbs olive oil

  • 2 tbs nutritional yeast

For the dijon vinagrette:

  • 1/4 cup extra virgin olive oil

  • 2tbs apple cider vinager

  • 1tbs maple syrup or honey

  • 1tbs dijon mustard

 

How to:

Chop vegetables and saute with garlic and oil until cooked through and crispy. Mix in nutritional yeast and Dijon Vinaigrette. Heat tortillas on the stove, top with veggies and enjoy!
