Sauteed Escarole and Chickpeas

I’m a big believer that cooking should be simple, and eating healthy doesn’t have to be hard!

Mixing pantry stables with some fresh produce is one of my favorite ways to create balanced, nutrient-packed, SIMPLE meals!

This dish took under 10 minutes to make and is full of goods!

Escarole is a leafy green that’s loaded with vitamins and minerals, packed with fiber (hello gut health) & is a bitter - a family of greens that help support our stomach acid and overall digestion.

Bitters, whether in food form or tinctures, are a great way to support our natural digestive enzymes and acid production. This is important for people who have difficulty digesting foods like fat, or who suffer from frequent heartburn and reflux.

Ingredients:
2 cups washed and chopped escarole
1/2 cup cooked chickpeas
1/2 cup cooked quinoa
1 clove garlic
1 tbs olive oil
Splash of vegetable broth optional
Salt, pepper & nutritional yeast to taste

How to
1. Chop and wash escarole well and leave to the side.
2. Chop garlic and sauté garlic and oil in a pan for ~2 minutes until garlic softens.
3. Add in escarole, sauté until slightly cooked.
4. Mix in chickpeas and quinoa, add salt and pepper. Option to add a splash (or more!) vegetable broth for escarole to soak into.
5. Top with nutritional yeast, drizzle olive oil and enjoy
