Lettuce-Free Vegan Tahini Salad (Crunchy, Creamy & Plant-Powered)

With warmer days ahead, my body naturally starts shifting from cozy soups and stews to vibrant, fresh meals like smoothies and salads. And while I love my leafy greens (and recommend including them daily!), sometimes you just need something a little different.

This lettuce-free vegan salad is one of my favorite ways to enjoy lots of fresh vegetables without falling into the same salad routine. It’s crunchy, creamy, herby, and topped with a simple homemade lemon tahini dressing that brings it all together.

Salad Ingredients

  • 4 celery stalks (including leaves), chopped

  • 1 cucumber, diced

  • 1 ripe avocado, cubed

  • ¼ cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped

  • ¼ cup raw sunflower seeds, shelled

  • Salt and pepper to taste

Lemon Tahini Dressing

  • ½ cup tahini

  • Juice of 1 lemon

  • 2 tbsp extra virgin olive oil

  • 1 garlic clove (optional)

  • Sea salt and black pepper to taste

  • Water as needed to thin to desired consistency

Instructions

  1. Chop all veggies and herbs and place in a large mixing bowl.

  2. In a small bowl or jar, whisk together the tahini, lemon juice, olive oil, garlic (if using), salt, and pepper.

  3. Add water slowly until the dressing reaches a creamy, pourable texture.

  4. Toss the chopped veggies with the dressing until well coated.

  5. Serve immediately, or store in the fridge for up to 24 hours.
