Summer Chickpea Salad

SUMMER CHICKPEA SALAD

This plant-based salad will be on repeat for the rest of summer because it’s that good and super simple to put together. It is light and fresh but does not lack in flavor.

This summer salad is a perfect meal prep option. It is great as a standalone meal, but can easily be paired with any main entree as a colorful side dish.

Ingredients
1 can of organic chickpeas
3 stalks of celery, chopped
4 mini bell peppers, chopped
1 cup finely chopped kale
3Tbs organic EVOO
Juice from 1 lemon
1-2 cloves of garlic
1/8 tsp oregano + parsley
Pinch salt and pepper

Mix it all together and enjoy!

Feel free to eat this alone, as a side, or thrown on top of a bed of lettuce with some pumpkin seeds
